Vietnamese Soup (Pho)

 

A traditional Soup is coming your way, we will teach how to make Vietnamese Soup (Pho)


 

What you need:

 

Stock

  • 2 onions

  • 10 piece ginger

  • 2½ kg beef bones

  • 5 star anise

  • 6 garlic cloves

  • 8 piece cassia bark

  • 450 g beef brisket or chuck steak

  • 1½ tbsp salt

  • ⅓ cup fish sauce

  • 1 tbsp palm sugar

 

 

For bowls

 

  • 1 kg dried or fresh pho noodles

  • 225 g beef sirloin

  • 1 onion

  • 4 spring onions, scallions

  • ⅓ cup chopped coriander

  • black pepper

 

 

Garnishes

 

  • lime wedges

  • sliced chillies

  • Thai basil or Vietnamese mint sprigs

  • bean sprouts

 

Here’s how you make Vietnamese Soup (Pho)

 

  1. Grill the onions and ginger until a bit toasted for the stock and then set aside.

  2. Bring to a boil the beef bones in a large pot for 3 minutes. Then remove from heat and rinse with warm water. Put it back in the cleaned pot and add 6 liters of water to boil. Let it simmer. Remove unnecessary scum in the mixture and add in the grilled onions and ginger together with the remaining ingredients. Let it cook for 1 ½ hours or until the meat is done. Set aside in a bowl of cold water for about 10 minutes. Strain the the meat and chill. In the same pot, heat the broth to cook for another 1 ½ hours. Remove from heat and strain. Put in the refrigerator and remove excess fat.

  3. Serve with sliced cold meat and dried noodles (if you prefer) or fresh noodles soak in hot water to serve it hot. Add in the pre-heated broth the season it with pepper and garnish with onion spring onions and coriander.

  4. Taste the broth before eating the pho the mix in an amount of lime juice and chilli with basil or mint or bean sprouts (optional)
