Vietnamese-inspired Gin Oysters

Here’s another style of cooking Vietnamese-inspired Gin Oysters

 

What you need:

  • 12 oysters

  • 500 g sea salt

  • 2 red birds-eye chillies

  • 6 Vietnamese mint leaves

  • ¼ cup gin

  • ¼ cup rice vinegar

  • 2 tbsp fish sauce

  • 1 tsp palm sugar

  • 3 coriander roots

  • 2 red Asian shallots

  • 1 tbsp lime juice


 

Here’s how you make Vietnamese-inspired Gin Oysters

  1. In a heated saucepan, combine gin, vinegar, fish sauce, palm sugar, and coriander roots then let it boil. Pour in some shallots and lime juice.

  2. Drizzle some sea salts on the platter and put on top of it the oysters. Drizzle a spoonful of dressing over the oysters and finish off with Vietnamese mint and a pinch of chilli
