What you need:
½ cup white wine
2 tbsp light soy sauce
300 g tripe
1 tbsp Chinese fermented black beans
1 tbsp vegetable oil
3 garlic cloves
20 g piece ginger
2 red chillies
½ tsp sesame oil
5 coriander sprigs
Here’s how you make Tripe with White Wine and Black Bean Sauce (Tripes Au Vin Blanc Et Sauce Aux Haricots Noirs)
Saute the garlic, ginger and shallots for 2-3 minutes or until fragrant.
Add in the soy sauce and white wine and let it simmer. Combine the tripe and let it cook for about 15 minutes. Join in the coriander, black beans and sesame oil. Mix well
Plate in a bowl and top it with coriander leaves.
