What You Need:

1¼ cups plain flour

½ tsp bicarbonate of soda

1 egg, lightly beaten
-
4 (200 g) baby taro, grated and peeled
-
vegetable oil
-
20 (300 g) prawns
-
coral lettuce leaves and coriander leaves
Dipping sauce

2 red bird’s-eye chillies
-
¼ cup soy sauce
-
3 tsp fish sauce
Here’s how you make Taro and Prawn Cakes (Banh Cong)

Mix all the ingredients in a bowl then set aside for later. (Dipping Sauce)

In a large bowl, Add the flour, salt and bicarbonate of soda.Make a well and add in about 3 ¼ cups of water and the egg. Whisk the mixture until turned into a batter then mix in the taro.

Pre- heat a large saucepan over medium heat. Put enough oil to deep fry.In a laddle fill in half of laddle with the batter, toss in 2 prawns on top and plunge into the boiling oil, cook until golden brown. Using a spoon carefully run around the edge of the ladle to release the cake, turn over and cook for another few minutes and drain the excess oil with a strainer.

Place in a serving plate and garnish with lettuce and coriander leaves together with the dipping sauce you made earlier.
