Southern Vietnamese Spring Rolls (Cha Gio)

A traditional Southern Vietnamese Spring Rolls (Cha Gio) is shown above to have you cook in your kitchen


What you need:


  • vegetable oil

  • 1 tsp white sugar

  • 2 tsp chicken stock powder

  • 1 packet spring roll wrappers

  • ¼ cup dried wood ear mushrooms

  • 500 g minced pork

  • 250 g green prawns

  • 1 spring onion

  • 1 small carrot

  • 100 g taro




Here’s how you make Southern Vietnamese Spring Rolls (Cha Gio)

  1. In a bowl, add warm water and place in the mushrooms. Soak for about 20 minutes. In a strainer place the soaked mushroom to remove excess water. Remove the hard part of the mushroom with a knife

  2. In a mixing bowl, place the prawns, pork, spring onions, carrots mushrooms and taro. Add in chicken stock powder, salt and sugar to season

  3. In a saucepan or wok, lay the wrappers forming a diamond like pattern. Add a spoonful of meat mixture horizontally on the bottom. Brush both ends with water and fold the end of the wrapper to close the filling.

  4. In a baking tray, lay in the wrappers then cover with a tea cloth.

  5. Deep-fry the wrappers in a large saucepan filled with vegetable oil. Cook for about 3 minutes until golden brown.

  6. Remove excess oil with a tissue and plate in.
