Rice Noodles in Pork Broth with Chicken, Prawns and Omelette (Mi Quang)

Your fave comfort food is now easy to make, here’s how you make Rice Noodles in Pork Broth with Chicken, Prawns and Omelette (Mi Quang)

 

What you need:

 

  • 1 chicken breast on the bone

  • 4 eggs

  • oil

  • 600 g rice vermicelli

  • 12 cooked prawns

  • 200 g cha lua or ham

  • 4 spring onions

  • 1 handful coriander

  • 6 red Asian shallots

  • 3kg pork bones

  • 1 tsp salt

  • 6 dried shrimp

  • 2 tsp sugar

  • 1 tbsp fish sauce

  • 1½ tbsp shallots

  • 1 lime


 

Here’s how you make Rice Noodles in Pork Broth with Chicken, Prawns and Omelette (Mi Quang)

 

  1. Roast the shallots in a charcoal or a gas burner until slightly roast or when its smells aromatic

  2. In a large saucepan, add an amount of water and place the washed pork bones. Bring to a simmer, gradually discarding unnecessary scum that floats on top. Add in the shallots, sugar, fish sauce and dried shrimp into the broth and let it cook for 2 hours. Place the chicken breast and let it simmer again for 20 minutes.

  3. Remove the chicken from the broth. Remove meat from its bones and slice into pieces then strain the broth disregarding the spices. Simmer the broth

  4. Whisk eggs in a bowl then fry. Scatter eggs in the pan to form an omelettes

  5. In a separate bowl, soak vermicelli noodles in a boiling water for 5 minutes or until noodles are cooked. Rinse noodles with cold water and drain. Cut into desired lengths

  6. Distribute noodles into bowls then add in the coriander, spring onions, cha lua, prawns, omelette and chicken. Scoop an amount of broth then pour in the bowl. Add in some shallots and finish off with lime wedges.
