Rice Flour Cakes with Dried Prawns (Banh Beo)

What you need:

 

  • 100 g rice flour

  • 15 g tapioca flour

  • ¼ tsp salt

  • 1 cup lukewarm water

  • 1 tbsp red shallots

  • 1 tbsp garlic

  • ½ tsp black pepper

  • 400 g small tiger prawn

  • 4 tsp vegetable oil

  • 1 cup pork crackling

Dipping sauce

  • 3 tbsp sugar

  • 2 tbsp vinegar

  • 3 tbsp fish sauce

  • ½ cup prawn broth

  • 2 chillies

 

Here’s how you make Rice Flour Cakes with Dried Prawns (Banh Beo)

 

  1. Combine rice flour, tapioca flour and salt in a mixing bowl, then make a well at the center and add in half of the warm water. Mix the mixture with a wooden spoon or spatula and add in the rest of the water. Stir well to combine all the ingredients until the batter is fine and smooth free from lumps.

  2. Let it rest for 15 minutes after adding the vegetable oil in the batter.

  3. Cook the prawns for 15 minutes in a boiling water. Strain the prawns and reserve the broth.

  4. Combine the sugar, vinegar, fish sauce and prawn broth. Mix it well until all the ingredients are well combined or until the sugar is dissolved. Then add in the chilli and set aside. (dipping sauce)

  5. In a steamer with boiling water, put all the ramekins you have and fill them with your batter. Cook for 5-10 minutes or until its done

  6. In a mortar and pestle pound the prawns until it forms like a paste.

  7. Saute garlic, shallots and the prawn paste and stir-fry for 5 minutes. Add pepper and saute for another 3 minutes.

  8. Top the rice cakes with the sauted prawns and add some oil, pork cracklings and a teaspoon of dipping sauce

  9. Serve in a plate
