Noodle Salad (Bun Bo Xao)

Here’s another variety of a classical Noodle Salad (Bun Bo Xao)


What you need:


  • bean sprouts

  • 1 cucumber

  • 10 perilla leaves

  • 10 mint leaves

  • 10 Vietnamese mint leaves

  • 2 tbsp vegetable oil

  • 1 small onion

  • ½ tbsp crushed garlic

  • 1 lemongrass stalk

  • rump steak

  • 2 tbsp fish sauce

  • 500 g rice vermicelli

  • pickled vegetables

  • crushed roasted peanuts

  • fried shallots

  • nuoc cham sauce


Here’s how you make Noodle Salad (Bun Bo Xao)

  1. Marinate the beef with garlic, lemongrass and fish sauce for 10 minutes

  2. Separate the noodles into different bowls and put some bean sprouts, herbs and cucumbers

  3. Saute the remaining lemongrass and onion, stir for a bit and add in the beef. let it cook for a while until it's done and smells like a smoky flavor. mix in the fish sauce.

  4. Top in the beef in the bowl and drizzle with the remaining herbs. Finished off with fried shallots, peanuts and pickled vegetables. With nuoc cham as a dressing
