Grilled Pork and Spring Roll Noodle Salad (Bun Cha)

Another Noodle recipe that never gets old, Grilled Pork and Spring Roll Noodle Salad (Bun Cha)


What you need:

  • 2 cups perilla leaves

  • 2 cups mint leaves

  • 2 cups coriander leaves

  • rice vermicelli noodles

  • ½ oak lettuce

  • 1 cup bean sprouts

Pork patties

  • 1 tbsp honey

  • 2 tbsp vegetable oil

  • 500 g minced pork

  • 1 tbsp chopped coriander roots

  • 1 lemongrass stalk

  • 2 tbsp fish sauce

  • 2 garlic cloves

  • 1 bird’s-eye chilli

Spring rolls

  • 2 tsp fish sauce
  • 2 tsp soy sauce

  • 12 small spring roll wrappers

  • 25 g rice vermicelli noodles

  • 2 dried shiitake mushrooms

  • 100 g minced pork

  • 100 g green prawns,

  • ½ carrot,

  • 1 spring onion

  • 1 egg

  • vegetable oil

Dipping sauce

  • 2 garlic cloves

  • 2 bird’s-eye chillies

  • ½ cup fish sauce

  • 100 ml rice vinegar

  • 2 tbsp caster sugar


Here’s how you make Grilled Pork and Spring Roll Noodle Salad (Bun Cha)

  1. For the patties, combine all ingredients and mix together. Form the mixture into balls then press down to form a flat circle shape. Chill for 1 hour

  2. In another bowl, combine pork, noodles, mushrooms, carrot, spring onion, egg, fish sauce, soy sauce, salt and pepper to taste. In a tray, fill in the mixture in the spring roll wrappers at the center and roll the wrappers. Brushing both ends of the wrapper to close

  3. Preheat the saucepan and add oil filling half of the pan, deep-fry the spring rolls for 3 minutes or just about until crispy

  4. In a mixing bowl, toss in all the ingredients to make the sauce and simmer for a minute

  5. Cook the patties in a saucepan for three minutes then transfer into the preheated oven. Cook for another 10 minutes.

  6. Plate i the noodles in a bowl and lay in the patties, spring rolls, bean sprouts, herbs and lettuce. Sprinkle with  the sauce. If you prefer eating it with wrapping the lettuce on the meat and herbs.
