Fish Patties with Coriander and Chilli Baguettes

What you need:

  • ½ tsp sugar

  • 1 tsp salt

  • ½ tsp freshly ground black pepper

  • 3 spring onions

  • oil

  • 6 small baguettes

  • 3 tbsp mayonnaise

  • 1 iceberg or other crisp green lettuce

  • 1 cucumber

  • 120 g tofu

  • 1 handful coriander sprigs

  • 600 g snapper fillets

  • 2 garlic cloves

  • 1 tbsp fish sauce

  • 1 long red chilli

  • 1½ tbs soy sauce

 

Here’s how you make Fish Patties with Coriander and Chilli Baguettes

  1. Clean the fish with a sharp knives. Removing the bones and skin then slice into desired cuts.

  2. In a food processor, process the garlic and fish to make a paste. Chill for 30 minutes

  3. Form the mixture into patties using your oiled hand

  4. Deep-fry patties for 4-5 minutes or until golden brown. Prepare some tissue towel to remove excess oil

  5. In a preheated microwave, heat the baguettes for a minutes then slice into halves.

  6. Cover the bread with mayonnaise and top  with lettuce.cucumber, tofu, coriander, chilli and fish patties.

  7. Sprinkle with soy sauce
