Beef Noodle Salad (Bun Bo Xao)

 

Here’s how to make Beef Noodle Salad (Bun Bo Xao) in your own kitchen


 

What You Need:

 

  • 800 g beef topside cut into thin slices

  • 3 lemongrass stalks finely chopped

  • 200 g dried rice vermicelli noodles

  • 1–2 tbsp olive oil

  • 1 small onion

  • 1 garlic clove

  • 1 tbsp fish sauce

  • 2 cups fresh bean shoots

  • 5 lettuce leaves, shredded

  • 3 Lebanese cucumbers thinly sliced

  • 10 leaves Vietnamese mint, Thai basil, Thai coriander and spearmint

  • 2 carrots, grated

Nuoc cham

  • 1 cup water

  • 1½ tbsp white sugar

  • ¼ cup fish sauce

  • 1 lime, juiced

  • 1 garlic clove

  • 4–6 small chillies finely chopped

 

Here’s how you make Beef Noodle Salad ( Bun Bo Xao)

 

  1. In a bowl put in the beef with a teaspoon of lemongrass on it. Leave for atleast 10-15 minutes or best if overnight.

  2. On the other hand, In a large pot boil the water and cook the vermicelli noodles for how many minutes while stirring to avoid the noodle sticking. After a several minutes strain the noodles and wash with running water. Let it cool

  3. Mix in a large bowl the sugar, fish sauce, lime juice and water. Mix well until the sugar dissolves and then add in the garlic and chilli. Mix again then set aside. (For the Nuoc Cham)

  4. In pre-heated saucepan, add in the olive oil and lemongrass, saute for about 30 seconds then add in the garlic and onions, saute for another 30 seconds. Put the meat in the oil and coat it with the lemongrass. Mix in the fish sauce. Let it simmer for another minute until the is tender, before removing onto the heat add in the bean shoots.

  5. Share the lettuce, herbs, cucumbers and rice noodles into different bowls. Put on top of the vegetables your beef and grated carrots. Scrape a generous amount of your homemade Nuoc Cham.
