Banana Blossom Salad with Tofu Skin (Goi Bap Chuoi Tau Hu Ky)

What you need:

 

  • 1 banana blossom

  • 1 tbsp white vinegar

  • vegetable oil

  • 250 g potato starch

  • 1 sheet tofu skin

  • 1 handful bean sprouts

  • 1 tbsp toasted sesame seeds

  • 1 tbsp fried Asian shallots

  • 1 handful Vietnamese mint

  • 1 long chilli, julienned

Dressing

  • 2 tbsp sugar

  • 2 tbsp soy sauce

  • 3 tbsp warm water

  • 3 tsp pineapple juice

  • 1 birdseye chilli


 

Here’s how you make Banana Blossom Salad with Tofu Skin (Goi Bap Chuoi Tau Hu Ky)

 

  1. Combine all the ingredients to make the dressing then set aside.

  2. Peel off the extra layers of the banana blossom until all you got is the opaque in color heart of the blossom

  3. Set aside the purple leaf as well as the small young. Soak in a water with vinegar for how many minutes to avoid discoloration then drain.

  4. In a sauce pan, heat some oil and cover the baby banana with starch and deep-fry until crispy.Remove Excess oil and set aside then deep-fry the tofu skin until crisp and again remove excess oil.

  5. Combine the banana blossom, bean sprout, fried baby banana, tofu skin, sesame seeds, shallots, Vietnamese mint and soy dressing. Mix well to combine

  6. Decorate the bowl with the purple leaf with the pointy edge outside. Put in it the salad and garnish some left over tofu skin and some chilli.
