Vegetarian Pho with Shiitake Mushrooms

Veggies for a healthy living, here’s a dish you would want to try, Vegetarian Pho with Shiitake Mushrooms


What you need:

  • 1 cinnamon stick

  • 5 cups vegetable stock

  • 30 g ginger, finely sliced

  • 25 g dried shiitake mushrooms

  • ½ brown onion, finely sliced

  • 3 whole star anise

  • 2 tsp coriander seeds

  • 1½ tbsp soy sauce

  • 3 sheets nori

  • salt and pepper

  • 200 g carrots


To serve

  • 150 g rice noodles

  • bean sprouts

  • sliced long red chilli

  • fresh herbs such as mint, Vietnamese mint, coriander or Thai basil

  • lime wedges

  • hoisin sauce (optional)

  • Chinese chilli sauce or sriracha chilli sauce (optional)


Here’s how you make Vegetarian Pho with Shiitake Mushrooms

  1. Saute cloves, star anise, coriander seeds and cinnamon stick for 2-3 minutes. Pour in the the stock, ginger, shiitake mushrooms, onions and soy sauce. Let it simmer the lower the heat to cook slowly.

  2. Lay the nori sheets in a flame for 30-40 seconds or until crispy and slightly toasted. Add in the nori into the stock and and season with salt and pepper. Let it simmer for 20 minutes then pour in carrots and simmer again for 6-8  minutes until tender. With a strainer, Drain and separate the veggies and spices into the stock, reserving both. return the stock into the heat to keep warm and adjust the seasoning if needed.

  3. Separate the carrots and shiitake mushrooms and cut into thick slices.

  4. Serve rice noodles in separate bowls and top it with carrots and shiitake mushrooms. Ladle the stock into the bowls. Serve with lime wedges, chilli sauce and hoisin sauce.
