What you need:

  • 1 green mango

  • 2 tbsp Fried red Asian shallots

  • 1 bunch Asian basil

  • 200 g cooked pork neck

  • 200 g cooked medium tiger prawns

  • 1 bunch mint

  • 1 bunch coriander

  • 1 bunch small spring onions

  • nuoc cham

 

 

 

Here’s how you make Tiger Prawns Wrapped with Pork Belly and Vietnamese Mint (Tam Huu)

  1. Blanch the spring onion for a minute in a boiling water then set aside.

  2. Prepare platters and lay some green mangoes in it

  3. In another plate, prepare your prawns and fill in with pork neck, coriander, Asian basil, and mint leaves

  4. For the meat to stay in place, use the spring onion to tie both meat and the herbs then lay it on the green mango. Repeat the process until all the prawn and pork is being use.

  5. Serve in a platter and drizzle with the nuoc mam cham dipping sauce and finish off with fried shallots.
