Thit Kho Trung – Caramalized Pork and Eggs


(6~8 portions)


  • 2.5 lbs (1.1 kg) pork belly

  • 3 eggs, hard boiled, peeled

  • juice from 2 young coconuts

  • ¼ cup (50 g) sugar

  • ¼ cup (60 ml) of fish sauce

  • 5 shallots, peeled

  • salt

  • pepper

  • vinegar


Now, when everything is ready, we are going to make one of the most comforting foods in Vietnam: Thit Kho Trung


  1. Cut the pork in one and a half inch cubes. We are going to use the whole of the pork including the skin and the fat. Next, we are going to marinade the pork with a tbsp of minced garlic, a tbsp of minced shallot, a tbsp of seasoning powder or sugar and ½ tbsp of salt and some pepper. Mix it really well and let it marinade for about 30 minutes.


  1. In a pot of a medium heat, add 1 tbsp of cooking oil and 2 tbsp of sugar. The sugar is going to melt and turn into a caramel color then add in the marinaded pork and stir really well.


  1. After stirring for about 2-3 minutes when the outside of the pork is no longer pink, you can add in the coconut juice and water.


  1. After that, add in the hot boiled eggs and bring to a boil. The water level should be enough to cover the pork and the eggs. So keep skimming up the scum.


  1. Then we are going to add in fish sauce and cook in medium heat and uncover for 2 hours. It should taste a lot lighter than the normal taste because after 2 hours, the sauce will reduce by half and become saltier.


  1. Transfer the pork and eggs to a plate and sprinkle some black pepper on top. You can serve it with a plate of boiled vegetables or lettuce pickle if you like.


This is also a popular dish to serve during Vietnamese New Year, you can keep it  in the fridge for a week. The pork should be very tender but still in shape, you can easily break it with chopsticks. The broth should be clear and have a very nice caramel color.
