Steamed Whole Barramundi with Ginger and Shallot Sauce

Another fish dish you want to add on your cook book, so here’s Steamed Whole Barramundi with Ginger and Shallot Sauce

What you need:

 

  • Salt

  • pepper

  • 700 g whole barramundi

  • 2 piece ginger

  • steamed jasmine rice

Sauce

  • 2 red Asian shallots

  • 2 tbsp oyster sauce

  • 2 tbsp sesame oil

  • 1 tsp white sugar

  • 1 cup pork or chicken stock  

  • 2 tbsp peanut oil

  • 2 cm piece ginger

  • 2 garlic cloves, minced   

Garnish

  • 5 coriander sprigs

  • 2-3 spring onions

  • 1 large chilli


 

Here’s how you make Steamed Whole Barramundi with Ginger and Shallot Sauce

  1. Slice barramundi into 3 diagonal cuts on both sides. Cover with salt and pepper and put some ginger into the body

  2. Steam the fish over high heat in a steamer and cook for at least 10-15 minutes

  3. In a saucepan, add peanut oil and saute shallots, garlic and ginger until the flavors come out and slightly brown

  4. In a small bowl, mix some sugar, oyster sauce and sesame oil.

  5. In another saucepan pour stock and the sauce mixture. Stir well and let it cook for 2-3 minutes until some of the broth evaporates.

  6. Remove steamer from heat and plate in the fish top with coriander, spring onion and chilli. Drizzle with sauce and pair it with rice
