Steamed Mudfish Stuffed With Pork and Glass Noodles (Ca Hap Don Thit)

What you need:

 

  • 1 whole mud fish

  • 150 g minced pork

  • 2 wood ear mushroom

  • 1 garlic clove

  • 1 Asian shallot

  • 1 tsp sugar

  • 2 tsp fish sauce

  • ½ tsp freshly ground pepper

  • 12 sheets rice paper

  • 150 g dried vermicelli noodles

  • 1 bunch perilla

  • 1 bunch mint

  • 1 bunch coriander

  • 1 Lebanese cucumber

  • 2 tbsp crushed roasted peanuts

  • nuoc mam cham (dipping fish sauce)

 

Here’s how you make Steamed Mudfish Stuffed With Pork and Glass Noodles (Ca Hap Don Thit)

  1. Combine minced pork, mushrooms, garlic, shallots, sugar, fish sauce, and pepper in a bowl and mix them well.

  2. Make a gash on both sides of the fish from the tail to the head. Slowly take out the the rib cage to have a boneless pocket to where you stuffed the fish.

  3. Stuff the mixture onto the pocket you made and tie the fish or stitch it with thread and needle.

  4. Steam the fish in a steamer with boiling water for about 30 minutes.

  5. Drizzle the fish with spring onion and add some coriander and crushed peanuts.

  6. In a bowl with water, dip your rice paper and cover the fish with it together with the herbs, cucumber, coriander. Serve with Nuoc Mam Cham
