Spiced Mekong Delta Prawns (Tom Huong Cay)

What you need:

 

  • ¼ tsp cumin powder

  • ¼ tsp red curry powder

  • 300 g large prawns

  • 2 tbsp vegetable oil

  • 1 tbsp minced red Asian shallot

  • ½ tbsp minced garlic

  • 1 tbsp fish sauce

  • 1 tbsp sugar

  • 1 tsp oyster sauce

  • ¼ tsp cinnamon powder

  • 6 spring onion, scallion

  • 1 tbsp water

  • 1 long red chili, finely sliced

  • jasmine rice


 

Here’s how you make Spiced Mekong Delta Prawns (Tom Huong Cay)

  1. Marinate prawns with fish sauce, sugar, oyster sauce, cinnamon powder, cumin powder and curry powder. Fridge the marinated prawns for 30 minutes

  2. Saute garlic and red shallots until slightly brown and add in the prawns. Toss well to cook evenly. Pour water and spring onions. Let it simmer for a minute

  3. In a bowl, plate in the prawns and top with red chillies

  4. Best if paired with your favorite rice
