Speedy Chicken Pho


Want to grab a soup for this cold weather, well try our new dish Speedy Chicken Pho you cannot resist the aromatic smell when you get to sip the soup


What you need:



  • 5 cm piece ginger, unpeeled

  • 1 star anise

  • 1 tbsp coriander seeds

  • 4 whole cloves

  • 2 tbsp fish sauce

  • 1 small chicken

  • 4 red shallots, unpeeled

  • 1 tsp rock sugar

  • 3½ litres water

  • salt and MSG, to taste

To serve

  • 2 chicken breast fillets

  • 200g flat rice noodles

  • sprigs of Vietnamese mint

  • 2 sprigs coriander

  • 2 sprigs sawtooth coriander

  • 2 sprigs rice paddy herb

  • fishwort

  • bean sprouts

  • spring onion, sliced finely

  • 1 onion, sliced finely, soaked in cold water

  • chillies, sliced

  • limes, cut into wedges


Here’s how you make Speedy Chicken Pho

  1. Chop the chicken meat into fine pieces disregarding the bones. Minced the meat into a meat mincer if there are any.

  2. Toast red shallots and ginger into a fire until the skin is toasted then peel off the burnt skin

  3. Toast star anise, coriander seeds and cloves in a pressure cooker until the aromatic smell of the spices comes out

  4. Then pour in Sugar, water, fish sauce, ginger, red shallots and chicken. Cover the pressure cooker and let it simmer for 45 minutes. Lower the heat if steam escapes rapidly

  5. Allow to depressurize once remove from heat then poach chicken breast and cut into thin slices.

  6. Plate in separate bowls the noodles and add some chicken then garnish with herbs and bean sprouts, lime, chilli, onion, and spring onion.

  7. After the pot has depressurized strain the stock and add Msg and salt to taste. Ladle into the bowls and enjoy!
