Snake Fish Smoked in Rice Straw

What you need:

 

  • 1 snake head fish, 600-800 g, cleaned and gutted

  • 1 thin bamboo stick 60 cm in length

  • 5 kg rice straw

  • 1 cup water


 

Here’s how you make Snake Fish Smoked in Rice Straw

  1. Skew the snake fish with a bamboo stick through its mouth to its tail. Make sure the fish is carefully place just right in the middle part of the stick

  2. Make the fish stand in the ground by digging the tip of the stick into the ground. Make sure the mouth of the fish faces upward

  3. Pour just enough water in the fish’s mouth and form a pyramidal shape with rice on top to enclose the opening.

  4. Place the rice straw alight

  5. You will know if its cooked when the rice straw is already burning

  6. Scrape some charred skin from the fish and directly eat it while it is on the stick
