Slow-braised Buffalo in Aromatic Spices

What you need:


  • 700 g buffalo chuck steak

  • 2 tbsp vegetable oil

  • 3 garlic cloves

  • ⅓ cup tomato paste

  • 1 cup beef stock

  • 4 red Asian shallots

  • 4 cloves garlic

  • ⅔ cup local pale ale

  • 3 star anise

  • 1 cinnamon stick

  • 1 tbsp chilli oil

  • 6 baby carrots

  • 1spring onion

  • thinly sliced red chilli and baguette

  • 1 tsp five-spice powder

  • 1 tbsp Shaoxing rice wine

  • 2 tbsp oisin sauce

  • ½ tsp chilli flakes

  • 4 triangles Laughing Cow cheese


Here’s how you make Slow-braised Buffalo in Aromatic Spices


  1. Combine Cow cheese, chilli flakes, hoisin sauce, rice wine and five spice powder in a bowl and mash the cheese to combine the ingredients. Mix well. Pour in some beer and stir well, then add the buffalo and mix to cover the meat with the mixture. Marinate in the fridge for an hour.

  2. Saute garlic until slightly brown then add buffalo to cook in a high heat. Mix until the meat and garlic are mixed together.

  3. Lower the heat and pour tomato paste stir-fry for  2 minutes. Pour in the stock and let it boil. Remove impurities occasionally. Then add shallots. star anise, cinnamon, and chilli oil. Cook for 2 hours or until the meat is done or tender enough.

  4. Add the carrots and let it cook for another 10 minutes

  5. Plate it in a large bowl and garnish with fresh chilli and spring onions. Pair it with baguette
