What you need:

 

  • 200 g fresh wakame seaweed, finely sliced

  • 2 tbsp olive oil

  • 8 scallops

  • 40 g seaweed butter

  • 1 tbsp lime juice

  • toasted white sesame seeds

  • black sesame seeds

Dressing

  • 2 tbsp light soy sauce

  • 2 tbsp rice vinegar

  • 4 drops sesame oil

  • 1 tbsp mirin

  • chilli flakes

  • 3 cm piece ginger

  • 4 spring onions

  • 1 tsp sugar


 

Here’s how you make Scallops with Seaweed Butter (Noix de Saint Jacques au Beurre d’ algues)

  1. In a mixing bowl, mix all the ingredients to make the dressing. Stir until sugar dissolves.

  2. Mix in wakame seaweed to the dressing mixture and combine well to coat. Let it sit and set aside.

  3. In a preheated pan, saute scallops in an olive oil and let it cook a minute.

  4. Serve in a nice plate with the wakame salad on the side.

  5. In a hot saucepan, add butter and let it simmer then add lime juice and let it cook for 30 seconds

  6. Drizzle the scallops with lime sauce and the seaweed butter. Top it off with toasted sesame seeds.
