Salt and Pepper Cuttlefish

A quick easy procedure on how to make Salt and Pepper Cuttlefish

What you need:

  • 1 egg white

  • 200g potato starch

  • 1 spring onion

  • 2 bird's eye chillies

  • 1 garlic clove

  • 200 g squid tubes

  • 2 L vegetable oil

  • 1 tsp salt and pepper

  • ¼ cup garlic oil

  • 1 tbsp salt

  • 1 tsp sugar

  • 1 tsp white pepper

  • 1 tsp ground ginger

  • ½ tsp five-spice powder

Garlic oil

  • 3 garlic cloves

  • 2 egg yolks

  • ¼ tsp finely ground white pepper

  • 250 ml olive oi

  • 1 tbsp lemon juice

  • ¼ tsp salt


 

Here’s how you make Salt and Pepper Cuttlefish

  1. Combine all ingredients in a mixing bowl for the seasoning mix. Set aside

  2. Pound some garlic to form a paste. Then add egg yolks, lemon juice, salt, and white pepper then whisk to combine well. Pour a drop of olive oil gradually until a 50 ml of oil is being whisk. Mix well until it becomes completely liquid and well combined. Set aside

  3. Slice the cuttlefish from the top edge to the bottom. Make diagonal slices on the flesh and make a crisscross cut pattern

  4. In a mixing bowl, pour in the egg white and whisk until it forms a foam and pour it on the cuttlefish.Cover the fish with the mixture while gradually adding the potato starch until all the cuttlefish is covered well

  5. Remove any excess flour then cook in a medium heat. Remove excess starch in the oil if any. You will know when the fish is done if it is golden brown and crispy. Remove excess oil with a paper towel

  6. Leave some oil in the wok and saute onion, chilli and garlic. Stir to combine well and pour back the cuttlefish. Toss the fish until all ingredients are combined while adding the seasoning mix.

  7. Serve in a platter with garlic oil
