Red Dzao Salmon Steamboat (Lao Ca Hoi Dzao Do)

What you need:

  • 2 coriander roots

  • 3 litres water

  • 2 tomatoes

  • 2 long red chillies

  • 1 tbsp sate sauce

  • ½ pineapple

  • 4 lemongrass stems

  • 4 cm knob ginger

  • 15 dried shiitake mushrooms

  • 2 black cardamom

  • 1 tbsp salt

  • 6 tbsp fish sauce

  • 2star anise

  • 2 tbsp lime juice

Raw ingredients

  • 1 kg soft rice noodles

  • 1 Chinese white cabbage

  • 1 bunch watercress

  • 1 bunch water spinach

  • 1 bunch mustard greens

  • 1 salmon fillet

  • 4 tomatoes cut into wedges

  • 500 g silken tofu


Here’s how you make Red  Dzao Salmon Steamboat (Lao Ca Hoi Dzao Do)

  1. Bring to a boil 3 liters of water with lemongrass, bones and head of salmon, coriander roots, star anise, black cardamom, mushrooms, and ginger. Occasionally remove impurities. Lowering the heat let it simmer for an hour.

  2. After an hour, mix in the fish sauce, salt, lime juice, pineapple, chilli, sate sauce, and tomatoes and let it simmer for 5 more minutes

  3. In a big table, prepare a portable gas cooker in the middle, turn on the heat and put the stock pot on the heat. Prepare platters and arrange all raw ingredients. Let the eaters choose what they want to cook and eat
