Prawn and Mussel Stir-fry

What you need:

  • 1 kg mussels

  • 350 g green king prawns

  • 250 g snow peas

  • 2 tsp chicken stock powder

  • 20 g dried shiitake mushrooms

  • 2 tbsp vegetable oil

  • 1 onion

  • 1 tsp soy sauce

  • 2 tsp fish sauce

  • 2 tsp white sugar

  • sliced spring onions

  • coriander sprigs

  • steamed rice


Here’s how you make Prawn and Mussel Stir-fry

  1. Prepare a bowl of warm water and soak the mushrooms for 20 minutes. Remove excess water from the mushroom.

  2. Saute onion for 2 minutes until the color becomes clear, pour over the mussels and stir-fry for 2 minutes until the mussels starts to open. Add in snow peas, prawns and mushrooms and cook for another minute until prawns becomes orange in color and peas becomes soft when you eat.

  3. Serve in a platter and garnish with coriander and spring onions. Best if paired with rice
