What You Need:
- 1 kg(2 lb 4 oz) pork leg, finely minced
- 1 tbsp sea salt
- 2½ tbsp fish sauce
- 1 large banana leaf
- 6 baguettes
- 2 cucumbers, sliced lengthways
- 1 bunch coriander
- 6 spring onions
- 2 red chillies, sliced
- light soy sauce
- pinch of salt and pepper
Here's how you make Pork Terrine Baguette (Banh Mi Cha Lua)
In a large pan ( shape like bowl or “WOK”), fry the salt for a few minutes.
In a food processor, add in the pork, fish sauce and salt to make a paste.
In another bowl, soak the banana leaf for 5 minutes and let it dry. Then cut the leaf in half and cross it to the other half.
Secure the pork paste in the banana leaf, fold all the sides of the leaf to form a parcel and secure it with a string that is tightly knot. Put it in a boiling water with salt and let it cook for 1 hour.
Let it cool for a few minutes. Remove the banana leaf and fill it into the baguettes together with the cucumber, coriander, spring onions, chili, soy sauce, and a pinch of salt and pepper to taste.
