Pork Terrine Baguette (BANH MI CHA LUA)

What You Need:

  • 1 kg(2 lb 4 oz) pork leg, finely minced
  • 1 tbsp sea salt
  • 2½ tbsp fish sauce
  • 1 large banana leaf
  • 6 baguettes
  • 2 cucumbers, sliced lengthways
  • 1 bunch coriander
  • 6 spring onions
  • 2 red chillies, sliced
  • light soy sauce
  • pinch of salt and pepper


Here's how you make Pork Terrine Baguette (Banh Mi Cha Lua)

  • In a large pan ( shape like bowl or “WOK”), fry the salt for a few minutes.

  • In a food processor, add in the pork, fish sauce and salt to make a paste.

  • In another bowl, soak the banana leaf for 5 minutes and let it dry. Then cut the leaf in half and cross it to the other half.

  • Secure the pork paste in the banana leaf, fold all the sides of the leaf to form a parcel and secure it with a string that is tightly knot. Put it in a boiling water with salt and let it cook for 1 hour.

  • Let it cool for a few minutes. Remove the banana leaf and fill it into the baguettes together with the cucumber, coriander, spring onions, chili, soy sauce, and a pinch of salt and pepper to taste.
