Pork, Crab and Noodle Soup (Bun Rieu)

Make some for your friends and serve them with Pork, Crab and Noodle Soup (Bun Rieu)


What you need:

  • 6 tomatoes

  • 1 packet lightly fried fresh bean curd (tofu)

  • splash of olive oil

  • 3 tbsp tomato paste

  • 180 g tamarind

  • 8 spring onions

  • 1 lemon

  • 1 tbsp sugar

  • 450 g vermicelli noodles

  • 1 lettuce

  • 150 g pork mince

  • 200 g tin crab mince

  • 400 g tin crab meat in spices

  • 200 g fresh crab meat

  • 200 g dried shrimp

  • 12 eggs

  • 3 tbsp fish sauce

  • 6 litres chicken stock


Here’s how you make Pork, Crab and Noodle Soup (Bun Rieu)


  1. Combine fish sauce, eggs, dried shrimp, crab meat and pork mince

  2. Bring to a boil the chicken stock and add a scoop of pork and crab mixture gradually. Then add in the slice bean curd and tomatoes

  3. Simmer olive oil and 3 tbsp of tomato paste and mix for a couple of minutes. Add in tamarind paste into the broth. Strain the paste when you pour in the paste. Spoon a bit of broth to help sieve the paste

  4. Sprinkle chopped spring onions, sugar and lemon juice

  5. Soak vermicelli noodles in a warm water and distribute them into bowls

  6. Pour the broth into the noodles and finish off with sliced lettuce
