Pork and Egg Stew ( Thit Kho Nuoc Dua)

Instructions:

 

  • 60 ml(¼ cup) fish sauce

  • 2 tbsp soy sauce

  • 1 tbsp liquid palm sugar , or 1 tbsp palm sugar, grated, melted

  • ½ tsp chicken stock powder

  • 2red bird’s-eye chillies

  • 1 kg boneless pork belly,cut into pieces

  • 800 ml coconut water 3 garlic cloves,

  • 4 eggs, hard-boiled,

  • 60 g bamboo shoot wedges

  • steamed rice

 

Here's how you make Pork and Egg Stew (Thit Kho Nuoc Dua)

 

  1. In a large bowl, combine the fish sauce, soy sauce, sugar, chicken stock and chillies.Add in the pork and coat to marinate. Chill for 1 ½ hours with plastic cover.

  2. In a large stockpot,bring to a boil the coconut water, garlic, and 500 ml of water. Scrape out the garlic and put the pork and marinade. Let it cook for 30 minutes. (uncovered)

  3. Add in the eggs and bamboo shoots and let it cook for another 15 minutes or until the pork is tender.  

  4. Serve it with rice.
