Pomelo and Mud Crab Salad

What you need:


  • 50 g dried shrimp

  • 2 tablespoons vegetable oil

  • 1 garlic clove

  • 5 mint leaves

  • 5 perilla leaves

  • 5 Vietnamese mint leaves

  • 1 pink pomelo or 2 small pink pomelos

  • 200 g mud crab meat

  • 5 Asian basil

  • 1 tablespoon fried red Asian shallot

  • ½ tablespoon fried garlic chip

  • 1 chilli

  • 3 tablespoons dipping fish sauce


Here’s how you make Pomelo and Mud Crab Salad

  1. Saute garlic in a hot vegetable oil until slightly brown

  2. Pour in some dried shrimp and cook for 3 minutes until crispy. Remove from heat and let it cool

  3. Divide pomelo into bite sized and combine dipping fish sauce, fried garlic, fried red shallots, sliced herbs, dried shrimp and crab meat. Mix well to combine

  4. Serve in a plate and finish off with peanuts and chilli
