What you need:

  • White radish, peeled, shredded

  • 200 tiny cooked prawns, shells on

  • 200g cooked pork belly, sliced

  • 200g lotus stems (available in jars from Asian grocers), sliced or shredded

  • 40g celery, shredded

  • 1 cucumber, peeled, deseeded, shredded

Dressing

  • 1/2 cup white vinegar

  • 1 cup sugar

  • 3/4 cup fish sauce

Garnish

  • Sliced red chilli

  • Fried shallots

  • Peanuts

  • Coriander

  • Prawn crackers

 

Here’s how you make Lotus Stem Salad with Prawns and Pork

 

  1. In a mixing bowl, combine all the salad ingredients. Mix it well

  2. In a separate bowl combine all the dressing ingredients. Pour in the salad mixture and mix well together to coat well. Spring with red chilli, fried shallots, peanuts and coriander to finish it off

  3. Best paired with prawn crackers
