Lemongrass Chilli Chicken (Ga Xao Xa Ot)

What you need:


  • 500 g chicken thigh fillets

  • ¼ cup vegetable oil

  • 1 cup young coconut juice

  • ¼ cup fish sauce

  • 1½ tbsp sugar

  • 2 lemongrass stalks

  • 4 garlic cloves

  • 2 long red chillies

  • ½ onion

  • 3 coriander sprigs

  • jasmine rice, to serve


Here’s how you make Lemongrass Chilli Chicken (Ga Xao Xa Ot)


  1. Marinate the chicken overnight or at least an hour with lemongrass, garlic, chilli, and sugar dissolve in fish sauce. Combine well to cover the chicken.

  2. In a saucepan, saute the remaining garlic, chilli, and lemongrass until slightly brown, then add in the marinated chicken and saute for about 2 minutes or until the chicken is done.

  3. Mix in the coconut juice and cover. Let it simmer for about 5 minutes or until the juice has evaporated half of it.

  4. Prepare a nice bowl and serve with Jasmine rice garnished with coriander.
