Citrus-cured Goat Salad (Tai De)

Here’s another salad dish you won't be missing, We will show how to cook Citrus-cured Goat Salad (Tai De)


What You Need:


  • ½ tbsp salt

  • 2 tbsp finely cut galangal

  • 300 g goat meat with skin

  • 2 limes

  • 1 handful rice paddy herb

  • 1 handful saw tooth coriander

  • 1 lemongrass stalk

  • 1 small onion

  • 1 tsp toasted rice powder

  • 1 tbsp roasted sesame seeds

  • 1 tbsp crushed peanuts

  • 1 chilli

  • 2 crisp sesame rice-paper crackers


Dipping sauce


  • 1 chilli,

  • ½ cup salty hoisin sauce

  • 1 tbsp sugar


Here’s how you make Citrus-cured Goat Salad (Tai De)


  1. In a large sauce pan, boil water and add salt and the galangal. Let it boil for a minute then add in the goat meat. Let it cook for 3 more minutes.

  2. Drain the goat meat with a strainer and mix in the lime juice, soak for 10 minutes the drain.

  3. In a mixing bowl, mix the dipping sauce and ingredients then add the mixture of goat meat, rice paddy herb, lemongrass, sawtooth coriander, rice powder, onion, peanuts, sesame seeds and the hoisin dipping sauce. Stir well until all the ingredients are mix together.

  4. Serve in a platter and garnish with chilli together with rice-paper crackers and hoisin dipping sauce.
