Chilli Salted Squid (Muc Rang Muoi)

What you need:

 

  • 200 g squid tubes

  • 1 egg white

  • 1 cup potato starch

  • 1 spring onion

  • 1 red bird’s-eye chilli

  • 1 small garlic clove

  • vegetable oil

  • Salt and pepper seasoning

  • 1 tbsp salt

  • 1 tsp white pepper

  • 1 tsp ground ginger

  • 1 tsp white sugar

  • ½ tsp Chinese five-spice

Salt, pepper and lemon dipping sauce (muoi tieu chanh)

  • ½ tsp salt

  • 1 tsp white pepper

  • 2 tbs lemon juice


 

Here’s how you make your Chilli Salted Squid (Muc Rang Muoi)

 

  1. In a mixing bowl, combine salt, pepper, ginger, sugar and five spice for the seasoning. set aside

  2. In the same bowl, mix all the ingredients to make the dipping sauce

  3. Open up the squid tubes from top to bottom then slice the squid in a crisscross pattern

  4. Cover the squid with the white egg and gradually sprinkle  some potato starch gradually until coated. Remove some excess starch.

  5. In a pre-heated sauce pan, deep-fry the coated squid for about 3 minutes or until golden brown and crispy. Strain the excess oil

  6. In the same pan but reduce the oil, saute garlic, onion, chilli and again the squid. Simmer for a minute then gradually stir in the seasoning.
