What you need:

 

  • 2 tbsp oyster sauce

  • 2 tbsp fish sauce

  • 1 tbsp honey

  • 1 lemongrass stalk

  • 6 spring onions

  • 1 garlic clove

  • ¼ cup olive oil

  • 1 kg salt marsh lamb cutlets

  • 1 tbsp spring onion oil

  • 1 red birdseye chilli

Herb salad

  • handful of rocket

  • mint leaves

  • coriander leaves

  • extra virgin olive oil

  • salt

  • pepper

 

 Here’s how you make Chargrilled Salt Marsh Lamb (Agneau De Pre-sale Au Grill)

 

  1. Mix altogether the oyster sauce, honey, lemongrass, spring onion, garlic and olive oil in a mixing bowl. Blend in the lamb and toss well to coat the marinade mixture. Cover and chill for 2 hours or best if overnight.

  2. Remove the lamb from the chiller and grill it in a preheated barbecue grill. Cook for about 2-3 minutes or until done.

  3. In a platter, put the cooked lamb and finish off with spring onion oil and chilli and combine with the salad herb you prepared
