Chargrilled Eel in Lemongrass and Turmeric (Luon Nuong Xa)

What you need:

 

  • 500 g eel fillets

  • 1 coriander (cilantro)

Marinade

  • 1 tsp sugar

  • 1 tsp freshly ground black pepper

  • 2 tbsp vegetable oil

  • 1 tsp curry powder

  • 1 tsp turmeric powder

  • 2 lemongrass stems

  • 2 garlic cloves

  • 1 birdseye chilli

  • 1 tsp salt

 

Here’s how you make Chargrilled Eel in Lemongrass and Turmeric (Luon Nuong Xa)

 

  1. In a mixing bowl, blend all the marinating ingredients. Then coat the eel with it and set aside.

  2. In a saucepan, cook the marinated eel while reserving the marinade mixture.

  3. Grill the eel for 3-4 minutes turning each side to evenly cook while brushing the marinade mixture to sink in the flavours well.

  4. Plate it in a bowl and finish off with coriander. Best serve with jasmine rice.
