Vietnamese Coconut Pancake (Banh khot)

Here’s another traditional recipe that you will love, Vietnamese Coconut Pancake (Banh Khot)


 

What you need

 

  • 500 g rice flour

  • 100 g glutinous rice flour

  • 1 can coconut cream

  • 2 tsp ground turmeric

  • 1 tsp salt

  • 1 tsp chicken stock powder,

  • 10 g green onion (shallot)

  • 200 g green banana prawns

  • 200 g mung beans,soaked

  • vegetable oil

  • lettuce leaves

  • Vietnamese mint

  • basil

  • pickles

 

Dipping sauce (nuoc cham)

 

  • 2 tbsp fish sauce

  • 2 tbsp lime juice

  • 1garlic clove

  • 1 carrot, grated

  • 1red chilli

  • sugar

  • pepper


 

Here’s how you make Vietnamese Coconut Pancake (Banh Khot)

 

  1. In a bowl, combine the rice flour and Glutinous rice, and gradually add the coconut cream. Mix in the turmeric, salt and spring onion.

  2. Prepare the Banh Khot mold and grease it with vegetable oil then heat over a medium heat.  Fill in the mold with the batter you made, cover and let it cook for about 3-5 minutes. Remove the cover and add on top the shrimp, a spoonful of mung beans and let it cook again until the center of the batter is cooked and the edges becomes crispy.

  3. In a mixing bowl, mix the ingredients for the dipping sauce.

  4. In a plate prepare the lettuce and wrap the Banh Khot in it. Garnish with mint, pickles and the dipping sauce.
