Sweet Corn Pudding

A sweet taste in your tongue is what you all want and here’s Sweet Corn Pudding to satisfy your cravings

 

What you need:

 

  • 1 cup coconut cream

  • 4 cups coconut milk

  • 12 young white corn

  • 1 cup dried peeled yellow mung beans, soaked in water for 1 hour & drained

  • 150 g sugar

  • 1 tablespoon roasted white sesame seeds

 

Here’s how you make Sweet Corn Pudding

  1. Shave corn with a sharp knife and place it in a bowl.

  2. Bring to a boil the coconut milk and mung beans in a large pot the lower the heat. Let it simmer for about 20 minutes or until the mung beans soften.

  3. Pour in the shaved corn into the mixture and mix well until the pudding thickens . Lower the heat and let it cook for 5 minutes or until the corn is soft or ready to eat. Add in sugar and coconut cream with stirring occasionally to mix well.

  4. Let it cook for another 3 minutes then place in small bowls. Drizzle with toasted sesame seeds for garnishing
