Black Sticky Rice with Taro and Caramelised Banana

Enjoy your siesta with this Black Sticky Rice with Taro and Caramelised Banana Recipe

 

What you need:

  • 80 g coarsely shredded fresh coconut

  • 200 g taro

  • 1¼ cups black glutinous rice

  • 1 cup coconut cream

  • ¾ cup palm sugar

  • 1 banana

  • 150g caster sugar

Sweetened coconut cream

  • 400 ml coconut cream

  • 1 tbsp caster sugar

  • 1 tsp potato starch


 

Here’s how you make Black Sticky Rice with Taro and Caramelised Banana

  1. Pour in all the ingredients into a preheated saucepan to make the coconut cream. Continually stirring the mixture for 5 minutes until it starts to thicken, do not bring to a boil. When done transfer into a bowl and cover with plastic wrapper and set aside.

  2. In a cleaned saucepan, pour in 2 tbsp of water and palm sugar then stir for 5 minutes or until the sugar dissolves completely.

  3. Lay bananas in an oven tray with foil lined on it. Sprinkle 1 tbsp palm sugar and grill for 3 minutes until sugar is melted. Then set aside

  4. In another tray, lay coconut on the tray again with lined foils on the side. Drizzle with the remaining palm sugar and grill for about 10 minutes.

  5. In a boiling water, pour some salt and taro. Let it cook for 3 minutes or until tender. Wash with running water and drain.

  6. Wash rice with water 3 times to remove impurities.

  7. Cover rice with water just enough to cook then add coconut cream and let it boil. Lower the heat and occasionally stir the rice. Let it cook for 30 minutes until rice is tender. Pour in the taro and cook for another 5 minutes. Add the remaining coconut milk, caster sugar and salt.

  8. Prepare nice bowls and distribute equal amounts of rice in the bowls. Add caramelized bananas, coconuts and sweetened cream.

  9. Best serve when it's still hot
